Understanding food environments and consumer choice to support nutrition and sustainable food marketing
Abstract:
Food environments play a key role in influencing dietary choices and nutritional outcomes. Understood to be major contributors to the rise of unhealthy diets, overweight, and nutrition-related diseases in both high and low- and middle-income countries, this session will present recent research and policy considerations related to food environments. Prof Giacomo Zanello (University of Reading) will explore food environments in food policy to encourage healthier eating with insights from recent research in Thailand and Laos. Prof Ivo Vlaev (University of Warwick) will discuss modern behavioural science tools such as the MINDSPACE framework to optimise sustainable food marketing campaigns, with applications to ongoing research on food labels in Thailand.
